In a large bowl, combine the water, yeast, and sugar; let stand for 10 minutes or until the yeast foams. Stir the yeast mixture if specks of yeast appear not yet moistened. Add 1 ½ cups of the flour, the salt, and cardamom to the bowl, then stir to combine. Add the remaining 1 ½ cups of flour and stir to combine. The dough will be sticky and should pull away from the sides of the bowl. With floured hands, knead dough until smooth, 4 to 5 minutes.

Transfer the dough to an extra-large greased bowl. Cover the bowl with a towel. Let the dough rise at least 90 minutes, or until doubled in size.

Line a baking sheet with parchment paper. Punch dough down. Evenly divide dough into 20 portions. Roll each portion into a ¾-inch-diameter stick about 8 to 10 inches long. Space breadsticks on prepared baking sheet, allowing 1 inch between each stick. (If necessary, use two baking sheets.) Cover breadsticks with a damp towel and let rise for 1 hour.

Preheat the oven to 425°F. Brush the breadsticks with the melted butter and sprinkle with coarse salt. Bake for 10 to 12 minutes, or until golden. Remove the breadsticks from the oven, and transfer to a wire rack to cool slightly.
